Prawn cracker fat warning

It is reported in the Irish Independent today that a typical 104g portion of prawn crackers from Irish Chinese takeaways comprise an average of 608 calories.
This is yet another example of why we need as an industry to tackle nutritional labelling at all points in the food industry supply chain, this is being addressed as part of the FIR regulations.
But we need to think carefully as an industry about how smaller foodservice outlets are going to manage raw material specifications and the food product specification and allergen labelling requirements that this will throw up. While well resourced players such as McDonalds et al will be able to manage. What about the small independent operators. How will the comply & who will check and verify compliance?
