A recent Sunday Times Magazine article, January 1st 2012, provides some thought provoking pictures of Tapioca being dried in the Niger Delta.
It is unlikely any of this Tapioca will leave the local community, but it is a vivid example of the need for food businesses to understand what is happening in their entire supply chain.
Ironically some company or organisation in the Niger Delta region recognises that there may be some health and safety issues with the above practice, and just like we would do here in the UK, they have put up a sign.

What about the risk from consuming the dried tapioca.
